Rhode Island Greening apples with a standard fermentation. local sumac harvested from Zugibe vineyards. post fermentation two additions of sumac were added to the tank over the course of seven days. 

Tasting Notes: crisp vibrant acidity with moderate tones of sumac and dried apple peel
